If you are new to being on a gluten-free diet, do not worry. There is a lot out there that you can eat. Do not think of it as what you cannot eat; think of it as what you can eat.
You want to make sure to stay away from food that have the words stabilizer, plant protein, hydrolyzed, starch or flavoring on the label. These foods most likely are not gluten-free.
Foods such as whole, skim, low fat, dry, evaporated or even condensed milk are safe. Buttermilk, whipping cream, food made with Velveeta® cheese, American cheese, aged cheeses, Cheddar, Swiss, Parmesan or Edam are all safe.
Let us move to the next level of the food pyramid. Meat, as long as it is 100% meat is safe, as well as chicken, seafood, peanut butter, dried beans, eggs, peas and pork.
When it comes to rice, pastas and breads, you need to be careful. Cream of rice, cornmeal, wild rice, gluten-free noodles, corn, specially prepared breads and hominy are all safe to eat. Soybean, potato, arrowroot, tapioca, amaranth, buckwheat, carob, and quinoa flour are also all safe to eat.
For your fruits, you are safe with all fresh, frozen, canned or jarred fruits as well as all fruit juices. You can also indulge in fresh, canned, or frozen vegetables including yams, sweet potatoes and white potatoes. You should make sure to stay away from any vegetables that are creamed, or made in sauces that are thickened with flour. If the vegetables are in a sauce make sure that they are thickened with cornstarch and not flour, then they are safe for you to eat. It is also suggested that you stay away from vegetables that are breaded unless you know that they are gluten-free breadcrumbs.
